Healthy Chicken Fried Rice

Low Fat Diet

A simple and flavourful low-fat Chinese fried rice cooked in one pot with prawns, vegetables, and optional scrambled eggs — perfect for a quick and healthy meal.

  • Ingredients

    "1 pot rice
    2 cups water
    2 tsp fried garlic
    1 tbsp oyster sauce
    1 tsp white pepper powder
    1 tsp sesame oil (minyak bijan)
    8 pieces prawns (udang)
    1/2 small bowl sweetcorn
    1/2 small bowl carrot
    1 tsp salt (garam)
    1 tsp seasoning powder
    1/2 small bowl spring onion
    2 eggs, for scrambled egg (optional)"

  • Preparation

    "1. Add the rice and all other ingredients into the pot.
    2. Close the lid and press the ""Cook"" function. Let it cook for one full cycle, approximately 15–20 minutes.
    3. Open the lid and stir all the ingredients until well combined.
    4. Sprinkle with spring onions.
    5. When ready to eat, prepare scrambled eggs (if you're up for it) and add them into the rice cooker. Mix thoroughly."

Fried rice usually means a hot wok and a lot of oil: this version strips that back to a single rice cooker pot and a much lighter hand with fat. Rice, prawns, sweetcorn, and carrot go in together with a modest mix of oyster sauce, sesame oil, and seasoning, cooking down into a dish that still tastes properly savoury.

The optional scrambled egg is added right at the end, off to the side rather than fried in, which keeps the overall dish lower in fat while still giving you that familiar fried rice texture and look once everything's mixed through.

It's an easy way to turn a fridge full of odds and ends: prawns, a spare carrot, some corn; into a full meal for four, and because everything cooks together in one pot, it's a genuinely low fat, low effort dinner rather than a stripped-down "diet" version of a takeaway favourite.
