Banana Pancake

  • Ingredients

    2 ripe bananas
    2 teaspoons of baking powder
    1 teaspoon of vanilla extract
    2 large eggs
    5 tablespoons of coconut flour

  • Preparation

    1. Peel and cut the bananas into thirds.
    2. Put all the ingredients into the mixer bowl. Close the lid and set the programme to BLEND speed 4 for 1 minute. Start the programme.
    3. Over a medium heat, put a tablespoon of batter into a lightly oiled pan to make pancakes. Leave each pancake to cook for 2 to 3 minutes on each side.
    4. Top the pancakes with Greek yoghurt, granola seeds and honey, as well as fresh fruit and maple syrup.
