Claypot Chicken Rice

  • Ingredients

    Serving Size: 3 persons
    3 cups of glutinous rice (soak overnight or at least 2 hours and drained)
    4 shallots (finely chopped)
    3 cloves of garlic (finely chopped)
    2 tbsp of dark soy sauce
    1 tbsp of soy sauce
    1/2 tbsp of oyster sauce
    1/2 tbsp of abalone sauce
    1/4 tsp of sesame oil
    1 tsp of sugar
    1/2 tsp of salt
    Pepper to taste
    2 cups of water
    2 tbsp of vegetable oil



    Toppings:
    1 tbsp of goji berry (washed) ​
    4 red dates (washed and halved) ​
    7-8 pcs chestnuts (soaked overnight and boil to soften) ​
    1/4 cup of lotus seeds (soaked 2 hours and boil to soften) ​
    3 pcs of Chinese mushroom (soaked and diced) ​
    1 cup of diced carrot​
    1 cup of diced zucchini ​
    1 small can of abalone ​
    Coriander and spring onion as garnish ​

  • Preparation

    Step 1:
    Set Tefal Delirice Plus Digital Rice Cooker 1.8L RK776B at 'Claypot' mode. Heat the oil.​

    Step 2:
    Sauté the shallots and garlic. Then, add in rice and continue to cook for 1-2 minutes.​

    Step 3:
    Pour in all the seasoning followed by water. Toss in the red dates and mushroom. ​

    Step 4:
    Close the lid and set to 'Glutinous Rice' mode. ​

    Step 5:
    Once ready, add in the topping ingredients on top of rice and set at reheat mode. ​



    Step 6:

    Toss the rice and garnish with coriander and spring onion.​
