Ingredients
250 ml water
200 g sugar
1 cinnamon stick
1 tbsp lemon juice
½ pack filo pastry sheets
70 g butter
3 tbsp sunflower oil
150 g crushed pistachios -
Preparation
1. Combine the water, sugar, and cinnamon stick in Tefal saucepan. Bring to a boil and let it simmer until the sugar is fully dissolved. Add 2–3 drops of lemon juice to prevent crystallization. Set aside to cool.
2. Melt the butter in the microwave or on the stovetop and set aside.
3. Unroll the filo pastry sheets on a clean work surface. Roll them into a single block, then cut into finger-thick slices.
4. Lightly oil an Tefal Easy Fry air fryer basket or line it with parchment paper.
5. Arrange the baklava slices in a single layer, leaving space between each piece.
6. Mix the melted butter with sunflower oil, skimming off any foam from the butter if necessary.
7. Brush or drizzle the butter mixture evenly over the baklava slices.
8. Air fry at 170°C for 8–10 minutes, or until golden and crisp. (Cooking time may vary by air fryer model, so check for doneness.)
9. Once cooked, gently drizzle the cooled syrup over the hot baklava. Sprinkle with crushed pistachios and serve each piece with a spoonful of thick cream.
Tips
1. You can use almonds or pecans in addition to pistachios for added flavor.
2. Ensure the syrup has cooled before drizzling it over the hot baklava to maintain its crisp texture.
3. Traditionally, baklava is served with kaymak, a thick, rich cream, often made from buffalo milk, which is commonly used in Turkish and Balkan cuisine to accompany desserts and pastries.
4. For perfectly crispy on the outside, moist on the inside results, use the Tefal Easy Fry Far-Infrared Vision Air Fryer (EY8218) or the Tefal Easy Fry Steam & Grill 3-in-1 (FW5018).
5. These models provide optimal airflow and moisture balance, ensuring an evenly golden, crunchy texture without drying out the pastry.
