Fluffy Pancakes with Banana

  • Ingredients

    This recipe makes around 10 pancakes
    2 egg yolks​
    120 ml milk​
    150 g pastry flour​
    2 teaspoons baking powder​
    4 egg whites​
    30 g caster sugar​​

    Maple syrup
    Sliced banana

  • Preparation

    Step 1:
    Pour the egg yolk and milk into the blender. Close the lid and press the "Pulse" button for 20 seconds.​


    Step 2:
    Add the flour and the baking powder. Close the lid and press the "Pulse" button for 10 seconds. Set the mixture aside in a large bowl.​

    Step 3:
    In a mixer bowl or using an electric whisk, beat the egg whites until stiff. When they start to foam, add the caster sugar a little at a time to make a meringue.​

    Step 4:
    Using a flexible spatula, fold the meringue into the first mixture, taking care not to beat the air out of the egg whites. When your mixture is smooth and foamy, it is ready.​



    Step 5:
    Heat a Tefal frypan. Oil the surface using a sheet of kitchen roll dipped in oil. Add a large spoonful of batter to the hot frypan. Lower the heat to cook your pancakes. If your frypan is too hot, they will colour too quickly and the middle will not be cooked.​

    Step 6:
    Adjust the heat as you cook the pancakes.​

    Step 7:
    Allow 2 to 3 minutes per side.​

    Step 8:
    Place on a wire rack after cooking to cool. Enjoy!​

    Enjoy these pancakes the traditional way, served with maple syrup and sliced bananas!
