Italian Carnival Doughnuts with Sultanas

Ingredients
1 sachet dried yeast (6 g)
1 tbsp caster sugar
2 tbsp warm water
3 eggs
250 ml milk
125 g caster sugar
40 g melted butter
2 pinches of salt
500 g T45 flour
90 g dried raisins
50 g pine nuts -
Preparation
1. Warm the water in the microwave to between 38°C and 40°C. Make sure that the water is not too hot as this could deactivate the yeast. Put the yeast to rehydrate with the water and add 1 tsp of sugar. Mix with a whisk. Leave to stand for 5 minutes. The yeast should be dissolved.
2. Beat the eggs in a large container. Add the milk, remaining sugar, melted butter and salt. Mix well.
3. Add the yeast mixture to the egg and milk mixture. Gradually stir in the flour until you have a smooth dough.
4. Add the raisins and pine nuts. Knead the dough until it is smooth and elastic.
5. Leave the dough to rest in a covered container in a warm place until doubled in size.
6. Line the baking tray with baking paper.
7. Using a pastry bag, form small balls on the plate of your appliance. Start the cooking process at 190 °C for 6 mins.
8. Cook the doughnuts until golden brown, making several batches if necessary.
9. Enjoy the doughnuts warm straight from the air fryer.
