Oyakodon (Japanese Chicken & Egg Rice)

Comfort Food

A comforting Japanese rice bowl with chicken, eggs and onion simmered in a savoury sauce, made entirely in a rice cooker. A warm, satisfying one-pot meal with minimal steps.

  • Ingredients

    280g/1 ½ cup White Rice
    260g Water
    ½ tbsp Dashi/Chicken Stock Powder
    260g Boneless Chicken
    ½ Onion
    1 tbsp Light Soy Sauce
    ½ tbsp Dark Soy Sauce
    2 tbsp Mirin
    1 tsp Sugar
    ½ tbsp Oil
    ¼ tsp Salt
    2 Eggs
    ½ stalk Spring Onion

  • Preparation

    1. Marinate boneless chicken with dashi/chicken stock powder, salt, light soy sauce, dark soy sauce, mirin, sugar, onion and oil for at least 15 minutes
    2. Place washed rice and water into the rice cooker
    3. Add marinated chicken and onion
    4. Close the lid and select "White Rice" function
    5. Beat eggs to 70-80% mixed with some egg white showing
    6. Open the lid really fast and pour in the beaten eggs. Close the lid and wait for 5 minutes
    7. Garnish the rice with some chopped spring onion and serve!
