Pandan Cake

  • Ingredients

    55g Cake Flour
    50g Sugar
    170g Eggs (About 3 Large)
    153g Coconut Milk
    30g Pandan Juice
    25g Vegetable Oil
    1.5g Baking Powder
    0.5g Salt

  • Preparation

    1. Add all the sugar to the egg whiteswhip with a mixer until stiff peaks form"
    2. Mix the flour and baking powder
    3. Sift the flour into a bowl
    4. In the yolk bowl, add coconut milk, pandan juice, and oil
    5. *Daily pandan intake shoud be ≤ 30g (fresh leaves juice). Not recommended for pregnant women, nursing moms, or infants.
    6. Mix it up
    7. Add the fisted flour in two batches. Mix gently until smooth
    8. Fold the yolk batter into the meringue in two batches Mix until silky
    9. Brush the pot evenly with oil
    10. Pour the batter into the rice cooker pot
    11. Select the “Cake” function cook for about 90 minutes
    12. Open the lid Let cool before removing
    13. Top with fruits or cream as you like
    14. Time to dig in and enjoy your fluffy pandan cake!
